The first time I made this moghrabieh soup it was so tasty and healthy, try this moghrabieh soup with chickpea (Lebanese Couscous) #ClaudettesKitchen you will not regret! why don't you try my Moghrabieh recipe? This is a classic Lebanese delight, a form of rolled semolina, similar to couscous, except much larger and is also known as Giant or Fat Couscous. Blended with aromatic spices, these juicy pearls add great texture and flavour to any dish.
Ingredients:
For the Chickpeas:
3 cups of chickpeas soak it overnight
Add 1.5 Liter of water
The next day wash well the chickpeas
5 Onions chopped into small cubes
1 Cup Vegetable oil
On medium heat, stir a little bit until the onions are wilted
Then add the chickpeas
Add water until cover the top of the chickpeas
2 teaspoons of salt
Cook for 30 minutes in pressure cooker
For the chicken:
2 Liters of water
Put 2 Kg of chicken legs, thigh, breast… whatever you want of chicken (it's up to you)
2 teaspoons of salt
On medium heat
After a few minutes on heat a white layer appears above chicken water (remove it)
After removing the white layer completely - add 1 cinnamon stick - 5 bay leaves
Cook for 30 minutes on medium heat
Moghrabieh:
After removing the chicken from the water, add 3 tablespoons of caraway, stir then add the Moghrabieh dough on medium heat
Add the chickpeas to the Moghrabieh dough, stir and cook for 20 minutes on medium heat
When boils turn on low heat and stir a little bit
After 20 minutes of cooking the dough and the chickpeas now we add the chicken meat
Stir and cook for 5 minutes, and then turn off the heat

What is Moghrabieh made of?
Moghrabieh, is a much-beloved traditional dish in Lebanon and is considered a feasting type of meal to which many relatives or friends are invited. It used to be made with both lamb shanks and chicken but nowadays most people prefer a streamlined version with only one or the other.
Is Moghrabieh the same as pearl couscous?
A Moghrabieh is a type of couscous that originates in Lebanon. It is similar in appearance to Israeli couscous, but is a little larger, and is made by forming pasta-like wheat dough into pea-sized balls, you'll find moghrabieh at Mediterranean and Middle Eastern specialty food stores.

Moghrabieh is a traditional Lebanese festive recipe. The best way to describe what Moghrabieh are would be to say that they're Lebanese couscous.
